Grilled Crappie over Cedar Planks

My wife tried a new way to prepare Crappie the other night that was simply delicious.  She was in line at the grocery store when an older fella told her to try grilling the Crappie on Cedar or Hickory boards or planks.  So she gave it a go with the Cedar planks.

Start by soaking the cedar or hickory board in water.  You want the board to be good and wet.  Light the grill, and set to low heat.  Season with a little salt, little pepper, and a little bit of  lemon juice.  Next put the Crappie fillets on the cedar plank and let cook for about 3-5 minutes depending on the heat.  Don’t overcook fish as it will become rubbery.

That’s basically all there is to it.  A healthy, tasty alternative to fried Crappie (which are also very tasty).
